Is atmospheric water safe to drink?
Condensing water from air does not by itself establish that the finished water is safe to drink. Water quality depends on the air, materials, wet surfaces, treatment system, storage, and maintenance.

Where contamination can enter
Dust and airborne material can enter with the air stream. Coils, trays, tubing, filters, tanks, and hands can introduce contaminants after condensation. Standing water can also create conditions for biological growth.
Design for cleaning
Parts that stay wet should be accessible for inspection and cleaning. Materials that contact drinking water should be appropriate for that use.
Treatment needs to match the risk
Filtration, disinfection, and other treatment methods address different problems. A DIY project should use appropriate water quality guidance and testing rather than relying on appearance or taste.
