Both can condense moisture from air, but they are designed for different jobs. A dehumidifier is built to control indoor humidity. A drinking water system needs sanitary materials, treatment, storage, and maintenance designed around water quality.

Why the shared physics causes confusion
The cold coil concept looks similar, so a bucket of dehumidifier condensate can resemble water from an AWG. The important difference is everything that water contacts before it reaches the container.
